White Bean Toasts
Ingredients:
- 2 tablespoons Extra Virgin olive oil
- 1 medium yellow onion, thinly sliced
- 2 large garlic cloves, grated
- One (15-ounce) can of white beans, rinsed well
- 1/4 cup water
- 3 cups green kale, stems removed
- Kosher salt and freshly ground black pepper, to taste
- Two (5-inch) pieces of sour baguette, sliced lengthwise, making four pieces in total
- 2 hard-boiled eggs, finely grated
- 4 teaspoons grated Parmesan cheese
Directions:
- Place a large skillet over medium heat. Add the oil, and when hot but not smoking, add the onion and saute until tender, about 8 minutes. Add the garlic and cook for an additional 30 seconds until fragrant.
- Add the white beans and water and cook until heated through. Add the kale and cook for 1 minute until just wilted. Season to taste with salt and pepper and set aside.
- Toast the pieces of baguette until lightly golden brown.
- To Serve: Place the toasted baguette on a serving platter. Spoon the bean-kale mixture on top of the toast. Sprinkle the grated egg on top, followed by a sprinkling of Parmesan cheese. Serve right away.
