Apple Cobbler
Ingredients:
For the Apples:
- 4 apples (I like a combonation of Honeycrisp and Sugarbee) peeled, cored, and cut into 1/4-inch slices
- 1/4 cup (light or dark) brown sugar
- 2 tablespoons sugar
- 3 tablespoons all-purpose flour
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon vanilla paste
- 1 teaspoon ground cinnamon
- Pinch of ground ginger
- Pinch of ground cloves
For the Topping:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- Pinch of Kosher salt
- 1/2 cup sugar
- 3/4 cup whole milk
- 6 tablespoons unsalted butter, melted
- 2 teaspoons vanilla extract
Directions:
- Preheat the oven to 350 degrees F. Lightly grease an 8x8 baking pan (or oval baking dish equivalent) and set it aside.
- For the Filling: In a large bowl, add the sliced apples, brown sugar, sugar, flour, lemon juice, vanilla paste, and spices. Gently toss well to coast. Add the filling to your prepared baking dish and set aside.
- For the Topping: In a medium bowl, add the flour, baking powder, salt and sugar. Stir in the milk, butter, and vanilla and mix until combined. Pour the topping on top of the filling to cover. Place the cobbler in the oven to bake for about 40 to 45 minutes, or until the filling is bubbling and the top is lightly golden brown.
- Remove the cobbler from the oven and allow to cool slightly. Serve warm with vanilla ice cream or fresh whipped cream.
