A Superfood Smoothie We All Need

Anyone feel tired today?  I call this a superfood smoothie and it may be just what you need.  Some believe the term “superfood” is just a marketing gimmick.  Others claim that superfoods are unusually healthful and may even help with some medical conditions.  I believe in moderation of almost everything.  Even if a given fruit or vegetable is healthy, I would be cautious about suggestions for extreme consumption, which I think can have unintended consequences.

But regardless of whether you think flax seeds and blueberries are superfoods, everything I have read suggests that they are overall rather good for us.  And that is why I created this tasty superfood smoothie and it only takes minutes to make.

A less common ingredient in this drink is raw red beets, which are surprisingly good for you.  Beets are known to have a high quantity of vitamin B .  Most don’t know that beets are also rich in iron and potassium.  Beets have even more health-boosting nutrients that you may not know about; to learn more, check out this link.

I also added some protein powder to make this a great morning or meal-replacement option, especially for busy people.  For this recipe, I used a new product I recently discovered and love, Bob’s Red Mill Vanilla Protein Powder with Chia & Probiotics .  This is a protein power blend that is made from pea protein powder, some chicory root fiber, chia seeds, added probiotics, and monk fruit extract, for sweetness.  Blended with almond milk and flax seeds, you have what I believe is a great, healthy vegan-friendly smoothie that will give you energy and not make you crash an hour later.  This is a great option for breakfast or an afternoon snack for adults and kids alike.

Ingredients
  • 1/4 cup raw red beets, roughly chopped
  • 1/2 cup fresh or frozen strawberries
  • 1/4 cup fresh blueberries
  • 1 cup almond milk
  • 3 tablespoons vanilla protein powder
  • 1 1/4 teaspoons flax seeds
  • 1 tablespoon honey
  • 1 cup ice
Directions
  • Step 1 Using a kitchen blender, add the beets, strawberries, blueberries, almond milk, protein powder, flax seeds, honey and ice and mix on high for 1 minute to incorporate.
  • Step 2 Pour into a serving glass and enjoy!
