Meyer Lemon Tom Collins
A Tom Collins is a slightly sweet, tart, and fizzy cocktail that pairs perfectly with warm weather. Invented in 1876 by “the father of mixology“, Jerry Thomas, this cocktail first appeared in his well-known book titled “How to Mix Drinks or The Bon-Vivant’s Companion.” This was the first drink book ever published in the United States. As with many cocktails, preparing a Tom Collins with good, fresh fruit can make the drink. Meyer lemons are incredible. A citrus fruit native to China is a cross between a lemon and a Mandarin orange.
Considered moderately sweet, they are known more for a tang that will make your mouth pucker. Adding Meyer lemon juice to a classic Tom Collins recipe keeps the drink light and refreshing but makes it a bit less sweet and a bit more interesting. This is an absolute must try for summer!
Meyer Lemon Tom Collins
Ingredients:
For the Simple Syrup:
- 1 cup sugar
- 1 cup water
For the Tom Collins:
- 1 ounce simple syrup
- 2 ounces freshly squeezed Meyer lemon juice
- 2 1/2 ounces gin (or vodka, for a Vodka Collins)
- 12 ounces good quality club soda
- Meyer lemon slice, for garnish
- Thyme sprig, for garnish
- Ice
Directions:
- For the Simple Syrup: In a small saucepan add the water and sugar, place over medium heat, and bring to a simmer, stirring, until the sugar dissolves. Allow the syrup to cool. Note: The simple syrup can be made in advance and stored in the fridge
- For the Cocktail: Fill a tall highball glass halfway with ice.
- Using a shaker, add about one cup of ice, simple syrup, lemon juice, and gin (or vodka). Tighten the lid of the shaker and mix vigorously for about 30 seconds, until frothy.
- Strain the Collins mixture into the prepared glass and add the club soda. Garnish with a lemon slice and thyme sprig.
