Meyer Lemon Tom Collins

A Tom Collins is a slightly sweet, tart, and fizzy cocktail that pairs perfectly with warm weather.  Invented in 1876 by “the father of mixology“, Jerry Thomas, this cocktail first appeared in his well-known book titled “How to Mix Drinks or The Bon-Vivant’s Companion.”  This was the first drink book ever published in the United States.  Post-publication, the beloved Tom Collins rose in popularity.  The original recipe by Jerry Thomas can be found here.

Meyer Lemon Tom Collins

As with many cocktails, preparing a Tom Collins with good, fresh fruit can make the drink.  Meyer lemons are incredible.  A citrus fruit native to China is a cross between a lemon and a Mandarin orange.

Considered moderately sweet, they are known more for a tang that will make your mouth pucker. Adding Meyer lemon juice to a classic Tom Collins recipe keeps the drink light and refreshing but makes it a bit less sweet and a bit more interesting.  This is an absolute must try for summer!
