The minute the leaves begin to turn and the mornings require something more substantial than iced coffee, I find myself reaching for a bag of crisp apples. Apple pie gets plenty of attention, and apple crisp will always have a place on my table, but these glazed apple fritter bites are the recipe I make when I want all those cozy autumn flavors without committing to an afternoon of baking.

Apple fritters became especially popular anywhere apple orchards flourished, and by the time they arrived in America, they had become a staple of bakeries, cider mills, and roadside farm stands every fall.

Fall also happens to be the best time to make them because apples are at their peak. Whether you reach for Honeycrisp, Sugarbee, Granny Smith, Pink Lady, or Fuji, you’re rewarded with fruit that’s crisp, juicy, and naturally sweet. Better apples make better fritters, and this is one recipe where it really shows. Unlike their oversized bakery cousins, these apple fritter bites come together quickly and don’t require wrestling with giant scoops of dough or worrying whether the centers have cooked through. Their smaller size means more crispy edges, more tender centers, and, perhaps most importantly, more little pockets for that sweet vanilla glaze to cling to. If there were ever an argument in favor of smaller desserts, this might be it.

Pair them with a hot mug of coffee, tea, or fresh apple cider, and suddenly getting out of bed doesn’t seem quite so unreasonable. They’re equally welcome on a weekend brunch table, tucked into a holiday breakfast spread, or served warm after an afternoon spent at the pumpkin patch or wandering through an apple orchard, pretending you only came home with the apples you planned to buy

Glazed Apple Fritter Bites
Ingredients:
For the Batter:
- 1 1⁄2 cups all-purpose flour
- 1⁄4 cup sugar
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1⁄4 teaspoon Kosher salt
- 1⁄2 cup milk
- 2 eggs
- 1⁄2 teaspoon vanilla extract
- 2 large Granny Smith apples (or other), peeled, cored, and finely diced
For the Apple Cider Glaze:
- 3 cups Confectioners' sugar
- 1⁄2 cup fresh apple cider
Directions:
- In a large, deep skillet, add 2-3 inches of vegetable oil over medium heat to 375 degrees F. Place a paper towel-lined plate near your workstation.
- For the Batter: In a large mixing bowl, add the flour, sugar, baking powder, cinnamon, and salt until well combined.
- Make a well in the center, and add the milk, eggs, and vanilla. Whisk gently to break up the eggs, then stir until the batter thickens. Fold in the diced apples.
- Drop the batter in heaping tablespoon-sized portions into the hot oil. Work in small batches. Do not overcrowd the pan and keep an eye on the oil temperature.
- Cook the fritter bites, carefully turning as needed, until golden on all sides, about 1-2 minutes per side. Remove with a slotted spoon and drain on the prepared paper towel-lined plate.
- For the Glaze: In a small mixing bowl, add the confectioner's sugar and apple cider and whisk until smooth. Using a fork, dip the warm fritter bites in the glaze, turning to coat fully.
- Place on a wire rack to drip and dry. Serve warm or at room temperature.
