Broccoli "Steaks" with Sweet-and-Spicy Tomato Jam
Ingredients:
For the Tomato Jam:
- 1 pint cherry tomatoes
- 1 tablespoon sugar
- 1 teaspoon red pepper flakes
- 1/2 cup water
For the Broccoli Steaks:
- 2 cups hand-torn sour baguette
- 1 1/2 ounces grated Parmesan cheese, plus additional for garnish
- 2 tablespoons Extra Virgin olive oil
- 3 medium broccoli crowns, each cut in half lengthwise
- Kosher salt and freshly ground black pepper to taste
Directions:
- Preheat the oven to 425 degrees F.
- In a small saucepan, add the tomatoes, sugar, red pepper flakes, and water and place over medium heat. Once simmering, reduce the heat slightly and cook until the tomatoes are broken down about 25 minutes. Remove from the heat and set aside.
- In the bowl of a kitchen mixer, fitted with a blade attachment, add the bread and Parmesan cheese and pulse on and off until coarse crumbs. Spread the breadcrumbs on a baking sheet, place in the oven, and bake for 4-5 minutes until lightly golden. Remove from the oven and reserve.
- For the Broccoli Steaks: Place a large cast iron pan over medium-high heat. Add the oil and when hot, but not smoking, add the crowns, cut side down, and cook until golden brown, about 5 minutes, or slightly longer depending on their size. Carefully flip the broccoli, season with salt and black pepper, and transfer the pan to the oven to cook for an additional 10 minutes.
- To Serve: Place the broccoli crowns on a serving platter, and top with the toasted bread crumbs, and the sweet-and-spicy tomato jam on the side.
