Chocolate Covered Strawberries

Dark chocolate is a favorite for its rich flavor and slight bitterness, which perfectly offsets the natural sweetness of strawberries. But milk and white chocolate, or some combination, can be just as wonderful. This simple confection is best enjoyed within 24 hours. Store them in a single layer in an airtight container lined with paper towels and refrigerate. Let them sit briefly at room temperature before serving for the best flavor. Avoid freezing, which can cause moisture and discoloration.

Chocolate Covered Strawberries
Ingredients:
- 16 ounces fresh, ripe strawberries
- 10 ounces (about 1 1/4 cups) chocolate chips or chopped chocolate, semi-sweet, milk, or dark chocolate
- 1 tablespoon refined coconut oil, optional (for softer chocolate)
- Toppings: shredded coconut, chopped nuts, sprinkles, additional melted dark and white chocolate for drizzling (optional)
Directions:
- Wash the strawberries. Place them on a clean towel and dry them one by one. Set the strawberries aside to air dry until they are completely dry. Note: room temperature strawberries work the best. Line a large baking sheet with parchment paper and set it near your work station.
- Put the chocolate and coconut oil in a microwave-safe bowl, and microwave in 20-second intervals, stirring after each interval, until melted and smooth. Make sure you don’t overheat the chocolate.
- Hold the strawberry by the green leaves and slowly dip each berry into the melted chocolate, covering the berry 3/4 of the way to the top. Lift and gently shake the excess chocolate off the berry. Place the dipped strawberry on the prepared baking sheet.
- If you are going to dip the berries in any toppings, do it now before the chocolate sets.
- If you want to drizzle with additional chocolate (dark, milk, or white), make sure all your chocolate is ready to go when you begin dipping. To drizzle the coated berries with more chocolate, dip a fork in the melted white chocolate or chocolate and drizzle over the dipped strawberries in a criss-cross fashion.
- Repeat with the rest of the strawberries. Let the strawberries sit at room temperature for about one hour, until the chocolate firms up.
- Chocolate covered strawberries are best enjoyed the day they are made, but they can be stored refrigerated for up to 24 hours.
