Named after the precious truffle fungus due to their similar appearance, chocolate truffles became synonymous with indulgence and elegance. The classic French truffle consists of a smooth chocolate ganache center, often flavored with liqueurs or other flavorings, and coated in cocoa powder, chocolate, or even nuts. Over time, their popularity spread across Europe and the world, becoming a staple in high-end chocolatiers and a favorite treat for special occasions and celebrations.

Dark Chocolate

Whip up a batch and watch them disappear almost as quickly as you can make them!
Chocolate Truffle Mice
Ingredients:
- 2/3 cup semisweet chocolate, roughly chopped
- 2 cups finely ground chocolate wafer cookie crumbs, divided ( I use Dewey's Bakery Brownie Crisp Cookie Thins )
- 1/3 cup sour cream
- 32 white nonpareils (for eyes)
- 1/4 cup sliced almonds
- Sixteen (2-inch) pieces of black shoestring licorice (for the tail)
- Toothpicks
Directions:
- In a medium microwave-safe bowl, add the chocolate and heat in 30-second increments until melted. Whisk until smooth. Mix in 1 cup of cookie crumbs, followed by the sour cream. Cover and refrigerate for 15 minutes.
- Place the remaining 1 cup of cookie crumbs in a shallow bowl and set near your workstation.
- To Assemble: Line a baking sheet with parchment paper and set it near your workstation. Using your hands, roll slightly less than one tablespoon of the chilled chocolate mixture into an oval shape.
- Taper one end slightly to resemble the mouse face. Roll the truffle in the cookie crumbs to coat. Using the toothpick, make a small hole a few centimeters in on what will be the tail end of the mouse. Insert the licorice piece. Attach two nonpareils for eyes on the opposite tapered end. Place two similar-sized sliced almonds on top, just above the eyes for ears. Place on the prepared baking sheet and repeat the above until all the chocolate mixture has been used. This should yield about 16 mice in total.
- Store the truffles in an airtight container in the refrigerator until serving.
