Tropical Pineapple Smoothie
The wait for summer sometimes seems endless. It’s funny, I remember feeling that way as a kid, but I guess some things never change. Summer not only means warmer weather, it means longer days, more laid-back attitudes, and for me (and many parents out there), a temporary respite from making school lunches. Summer also brings a plethora of amazing fruits and vegetables, healthier eating overall, and often simpler, less fussy foods.
Pineapples are a fruit that represents summer to me. Maybe that’s because I mainly associate them with tropical settings, white sandy beaches, and relaxing vacations. Whatever the reason, pineapples are a favorite summer fruit of mine and worthy of recognition, so I developed this refreshing tropical pineapple smoothie as a toast to summer and all its glory.
I have blogged about smoothies a lot, including another pineapple smoothie that’s popular with my kids. The very first smoothie recipe I posted was a chocolate breakfast protein smoothie, (a smoothie I was obsessed with for many years). My older son’s favorite smoothie of mine continues to be my simple strawberry smoothie, which he makes often, but other fun flavors I have developed are blueberry-cherry, matcha, pear-oat almond , and a dairy-free acai-banana.
What I love most about creating smoothies is the limitless ways you can make one. The flavor combinations are endless, there are numerous “base” options (here I use a combination of at milk and coconut milk), the sweetness level is totally controllable and the “add-ins“, as I like to call them, can be just about anything, from wheat grass to flaxseeds. Tomorrow my little one graduates from 5th grade and summer for my family finally begins. Tropical Pineapple Smoothie
Ingredients:
- 1 cup, fresh pineapple, core removed, roughly chopped
- 1 teaspoon golden flaxseeds
- 1 teaspoon agave
- 1/2 cup coconut milk
- 1/2 cup oat milk
- 1/4 teaspoon vanilla extract
- 1 1/2 cups ice
Directions:
- In a kitchen blender add the pineapple, flaxseeds, agave, coconut milk, oat milk, vanilla extract, and ice. Blend on high for 60 seconds. Pour into a glass and serve right away.
