- 2 tablespoons dill, finely chopped

- 1 1/2 pounds ground beef (ideally 80 percent lean) or ground lamb
- 1 small yellow onion, grated
- 3/4 teaspoon ground turmeric
- 2 1/4 teaspoons Kosher salt

- 1/4 cup walnut pieces, chopped
- 6 dill fronds, for garnish
- Flatbread, rice, pita, or naan, for serving (optional)
Directions:
- For the Yogurt Sauce: In a small bowl, mix the yogurt, cucumbers, mint, dill, garlic, salt, and pepper. Set aside.
- For the Kabab: In a medium mixing bowl, add the beef, onion, turmeric, salt, and black pepper, and mix well.
- Place a large cast-iron skillet over medium-high heat. Once the skillet is very hot, divide the beef into large, irregular chunks by using two spoons or your hands, and drop them into the pan and gently smash them down with the back of a spoon or spatula.
